Ingredients

  • 1 lb. ground beef
  • 1 large egg
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 Tbsp. chopped parsley
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 Tbsp. olive oil
  • 2 cups marinara sauce
  • 4 crusty Italian sandwich rolls
  • 12 slices provolone cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese

Directions

Preheat Oven

  1. Preheat your oven to 375°F (190°C). Lightly spray a baking sheet with non-stick spray to prevent sticking.

Prepare the Meatballs

  1. In a large mixing bowl, combine the ground beef, egg, breadcrumbs, Parmesan cheese, minced garlic, and chopped parsley.
  2. Season generously with kosher salt and freshly ground black pepper.
  3. Mix until well combined and form the mixture into 12 evenly sized meatballs.

Cook the Meatballs

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the meatballs and cook until seared on all sides, about 4 minutes.
  3. Pour marinara sauce over the meatballs, stirring gently to coat them. Cover the skillet with a lid.
  4. Reduce the heat to low and simmer until meatballs are fully cooked, approximately 8-10 minutes. The internal temperature should reach 160°F (71°C).

Prepare the Bread Boats

  1. While the meatballs are simmering, prepare the sandwich rolls. Cut a long rectangle through the top of each roll, hollowing out the top to create a “boat” shape.
  2. Line the inside of each bread boat with three slices of provolone cheese.
  3. Place the bread boats on the prepared baking sheet and bake for about 5 minutes, or until the cheese has melted.

Assemble the Subs

  1. Remove the bread boats from the oven. Place four meatballs into each boat, aligning them in a row.
  2. Spoon additional marinara sauce over the meatballs, ensuring they are well-coated.
  3. Sprinkle shredded mozzarella cheese evenly over the top, followed by the shredded Parmesan cheese.

Bake and Broil

  1. Return the subs to the oven and bake for an additional 6-8 minutes, or until the cheese is melted and bubbly.
  2. For a golden, crispy top, broil the subs for 1-2 minutes, keeping a close eye to prevent burning.

Serve

  1. Serve hot with extra marinara sauce on the side if desired. Enjoy the perfect combination of savory meatballs, rich marinara, and gooey cheese, all nestled in a warm, crusty roll.
