- 1 lb. thinly sliced sirloin steak, pounded thin, cut into 1″x3″ strips
- 2 Tbsp avocado or olive oil, divided
- 3 bell peppers (different colors), cut into thin strips
- 1 large yellow onion, sliced into strips
- 2-3 green onions, green parts sliced
- Fresh parsley or cilantro, chopped

- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
Directions:
- Prepare the Fajita Seasoning:
In a small bowl, whisk together all the fajita seasoning ingredients until well combined. - Cook the Vegetables:
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the onions and bell peppers to the skillet, seasoning them with half of the fajita seasoning. Cook for 3-4 minutes until the vegetables are crisp-tender. Remove the peppers and onions from the pan and set aside. - Assemble the Roll-Ups:
Lay the steak strips flat on a cutting board and sprinkle them with the remaining fajita seasoning. Top each strip with a portion of the cooked peppers and onions. Roll up the steak strips tightly and secure each one with a toothpick. - Cook the Roll-Ups:
In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Add the steak roll-ups and cook for about 2 minutes per side, until golden brown and cooked to your desired level of doneness. - Serve and Garnish:
