  • 2 Tbsp avocado or olive oil, divided
  • 3 bell peppers (different colors), cut into thin strips
  • 1 large yellow onion, sliced into strips
  • 2-3 green onions, green parts sliced
  • Fresh parsley or cilantro, chopped

  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Directions:

  1. Prepare the Fajita Seasoning:
    In a small bowl, whisk together all the fajita seasoning ingredients until well combined.
  2. Cook the Vegetables:
