- Prepare the Strawberry Mixture:
In a saucepan, combine the sliced strawberries, granulated sugar, and vanilla bean seeds. Cook over medium heat until the strawberries are soft and the sugar has dissolved. Remove from heat and allow to cool. - Heat the Cream and Milk:
In a separate saucepan, gently heat the heavy cream and whole milk until it simmers. Once simmering, remove from heat. - Whisk the Egg Yolks:
In a mixing bowl, whisk the egg yolks until well combined. - Temper the Egg Yolks:
Slowly pour the hot cream mixture into the bowl with the egg yolks, whisking constantly to prevent the yolks from curdling. - Thicken the Custard:
Return the mixture to the saucepan and cook over low heat, stirring continuously until the custard thickens and coats the back of a spoon. - Cool the Custard:
Strain the custard into a clean bowl and let it cool to room temperature. Once cool, refrigerate until thoroughly chilled. - Churn the Ice Cream:
Pour the chilled custard into an ice cream maker and churn according to the manufacturer’s instructions. - Combine Strawberry Mixture:
During the last few minutes of churning, add the prepared strawberry mixture, allowing it to swirl throughout the ice cream. - Freeze the Ice Cream:
Transfer the ice cream to an airtight container and freeze until firm, about 4 hours.
