This recipe is perfect for impressing guests or treating yourself to a taste of the tropics, right from your kitchen.

Ingredients

For the Coconut Panna Cotta:

  • 0.25 oz packet unflavored gelatin powder (about 1 tablespoon)
  • 1 tablespoon water
  • 2 ¼ cups canned full-fat unsweetened coconut milk
  • ¾ cup canned unsweetened coconut cream
  • ¼ cup granulated sugar

For the Latik:

  • 1 (14 oz) can unsweetened coconut cream (or coconut milk)

Additional Toppings:

  • Golden kiwi, sliced
  • Green kiwi, sliced
  • Mango, diced

Instructions

1. Prepare the Coconut Panna Cotta

  • In a small bowl, sprinkle the gelatin powder over 1 tablespoon of water. Let it sit for about 5 minutes to bloom.
  • In a medium saucepan, combine the coconut milk, coconut cream, and sugar. Heat over medium-low heat, stirring occasionally, until the sugar fully dissolves and the mixture is heated through but not boiling.
  • Remove the saucepan from the heat, then stir in the bloomed gelatin until completely dissolved and smooth.
  • Pour the coconut mixture into individual serving glasses or molds. Let them cool to room temperature, cover, and refrigerate for at least 4 hours, or until set.

2. Prepare the Latik

  • Pour the unsweetened coconut cream (or coconut milk) into a saucepan. Cook over medium heat, stirring occasionally, until it begins to simmer.
  • Continue cooking, stirring frequently, until the liquid reduces and the cream separates into oil and solids.
  • Once the solids turn golden brown, remove the latik from the heat. Strain out the oil and reserve the browned coconut solids. Let them cool slightly.

3. Assemble and Serve

  • Once the panna cotta is set, remove it from the refrigerator.
  • Top each panna cotta with a spoonful of latik.
  • Garnish with slices of golden kiwi, green kiwi, and diced mango to add a burst of flavor and color.
  • Serve immediately and savor the creamy, tropical delight.
