Loaded Jumbo Baked Potato with Shrimp and Velvety Cheese Sauce

Ingredients:

For the Baked Potato:

  • 4 jumbo baking potatoes
  • Olive oil
  • Salt and pepper to taste

For the Shrimp:

  • 1 lb large shrimp, tail removed and deveined
  • Olive oil
  • Ashley’s Seafood Secret seasoning (or your favorite seafood seasoning)

For the Sautéed Veggies:

  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, broccoli)
  • Olive oil
  • Salt and pepper to taste
  • Garlic powder

For the Cheese Sauce:

  • 1 ½ cups heavy cream
  • ½ cup fresh shredded Parmesan cheese
  • 1 tablespoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon Cajun seasoning
  • ½ teaspoon Italian herbs

Instructions:

1. Bake the Potatoes:
Preheat your oven to 450°F (230°C). Rub the jumbo potatoes with olive oil, then season generously with salt and pepper. Place the potatoes directly on the oven rack and bake for about 1 hour to 1 hour and 15 minutes, or until they are soft when pierced with a fork.

2. Cook the Shrimp:
In a bowl, toss the deveined shrimp with olive oil and a sprinkle of Ashley’s Seafood Secret seasoning. Heat a skillet over medium-high heat with a bit of oil. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they curl into a nice “C” shape and are cooked through. Remove from heat and set aside.

3. Sauté the Veggies:
In the same skillet, add a little more olive oil if needed. Add the mixed vegetables and sauté for 5-7 minutes, or until they are tender. Season with salt, pepper, and garlic powder to taste.

4. Prepare the Cheese Sauce:
In a saucepan, heat the heavy cream over medium heat until it begins to bubble. Once bubbling, gradually add in the shredded Parmesan cheese along with the garlic powder, salt, pepper, Cajun seasoning, and Italian herbs. Stir until the cheese is melted and the sauce is smooth.

5. Assemble the Loaded Potato:
Once the potatoes are baked, carefully cut a slit down the center of each potato and gently fluff the insides with a fork. Add a pat of butter and shredded cheese if desired. Top each potato with sautéed veggies, shrimp, and drizzle with the creamy cheese sauce.

6. Serve and Enjoy:
