Homemade Peppermint Patties

Ingredients:

  • ¾ cup sweetened condensed milk
  • 1 ¼ teaspoons peppermint extract
  • ⅛ teaspoon vanilla extract
  • 4 cups powdered sugar, plus extra for sprinkling
  • 2 cups dark melting/dipping chocolate
  • Sprinkles (optional)

Instructions/Directions:

1. Prepare the Mixture:

  • Mix the Base: In the bowl of a stand mixer, combine ¾ cup of sweetened condensed milk, 1 ¼ teaspoons of peppermint extract, and ⅛ teaspoon of vanilla extract.
  • Incorporate the Sugar: With the mixer on low, gradually add half of the powdered sugar. Continue adding the remaining powdered sugar bit by bit until a dough forms.

2. Shape the Patties:

  • Prepare the Surface: Sprinkle about 3 tablespoons of powdered sugar onto a piece of parchment paper.
  • Knead the Dough: Knead the dough a few times to ensure everything is well combined. Roll the dough out to a thickness of ½ inch, using additional powdered sugar to prevent sticking.
  • Cut the Shapes: Use a cookie cutter or the top of a small glass to cut 1 to 1½-inch circles. If the dough is too warm and difficult to cut, place it in the freezer for 15 minutes and try again.
  • Chill the Patties: Transfer the peppermint patties to a parchment-lined baking sheet and place them in the freezer for 15 minutes.

3. Coat with Chocolate:

  • Melt the Chocolate: In a microwave-safe bowl, melt the dark dipping chocolate in 30-second increments, stirring each time to prevent burning. Allow it to cool slightly for 3-4 minutes.
  • Dip the Patties: Using a fork, dip each peppermint patty into the melted chocolate, flipping it to coat both sides. Return the coated patties to the parchment-lined baking sheet. Add sprinkles on top if desired.

4. Firm Up:

  • Chill Again: Place the baking sheet in the refrigerator for 20 minutes to allow the chocolate to firm up before enjoying.
