Ingredients
- 1 pound ground chicken
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- 1 cup grated mozzarella cheese
- 2 tablespoons olive oil

- Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the Meatball Mixture: In a large bowl, combine ground chicken, ricotta cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, salt, and pepper. Mix until well combined.
- Form the Meatballs: Shape the mixture into meatballs, about 1-1.5 inches in diameter, and place them on the prepared baking sheet.
- Bake the Meatballs: Bake in the oven for 20-25 minutes, or until cooked through and golden brown.
- Sauté the Spinach: While the meatballs are baking, heat olive oil in a large skillet over medium heat. Add chopped spinach and cook until wilted, about 3-4 minutes.
- Make the Alfredo Sauce: Pour in the heavy cream, stirring to combine. Add the mozzarella cheese, and season with salt and pepper. Cook until the sauce thickens slightly.
- Combine and Serve: Once the meatballs are done, add them to the skillet with the spinach Alfredo sauce, coating them well. Serve warm.
