Ingredients

  • 1 pound ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1 cup grated mozzarella cheese
  • 2 tablespoons olive oil

Instructions/Directions

  1. Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Meatball Mixture: In a large bowl, combine ground chicken, ricotta cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, salt, and pepper. Mix until well combined.
  3. Form the Meatballs: Shape the mixture into meatballs, about 1-1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Bake the Meatballs: Bake in the oven for 20-25 minutes, or until cooked through and golden brown.
  5. Sauté the Spinach: While the meatballs are baking, heat olive oil in a large skillet over medium heat. Add chopped spinach and cook until wilted, about 3-4 minutes.
  6. Make the Alfredo Sauce: Pour in the heavy cream, stirring to combine. Add the mozzarella cheese, and season with salt and pepper. Cook until the sauce thickens slightly.
  7. Combine and Serve: Once the meatballs are done, add them to the skillet with the spinach Alfredo sauce, coating them well. Serve warm.
