Ingredients:
- 2 lbs boneless chicken thighs, cut into chunks
- ¼ cup pineapple juice
- ¼ cup orange juice
- ¼ cup apple cider vinegar
- ¼ cup achiote paste
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- Salt and pepper to taste
- Pineapple chunks, for skewering
Instructions/Directions:
Marinate the Chicken:
- In a large bowl, mix together pineapple juice, orange juice, apple cider vinegar, achiote paste, olive oil, minced garlic, dried oregano, ground cumin, salt, and pepper.
- Add the chicken chunks to the bowl and stir to coat each piece thoroughly with the marinade.
- Cover the bowl and refrigerate for at least 1 hour, or ideally overnight for enhanced flavor.
Prepare the Grill:
- Preheat the grill to medium-high heat.
Assemble the Skewers:
- Thread the marinated chicken chunks onto skewers, alternating with pineapple chunks for a balanced combination of savory and sweet.
Grill the Skewers:
- Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally to ensure even cooking.
- Grill until the chicken is fully cooked and has a slight char on the outside.

Total time: 30 minutes (excluding marinating time)
