Tropical Achiote Chicken and Pineapple Skewers

Ingredients:

  • 2 lbs boneless chicken thighs, cut into chunks
  • ¼ cup pineapple juice
  • ¼ cup orange juice
  • ¼ cup apple cider vinegar
  • ¼ cup achiote paste
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Pineapple chunks, for skewering

Instructions/Directions:

Marinate the Chicken:

  1. In a large bowl, mix together pineapple juice, orange juice, apple cider vinegar, achiote paste, olive oil, minced garlic, dried oregano, ground cumin, salt, and pepper.
  2. Add the chicken chunks to the bowl and stir to coat each piece thoroughly with the marinade.
  3. Cover the bowl and refrigerate for at least 1 hour, or ideally overnight for enhanced flavor.

Prepare the Grill:

  1. Preheat the grill to medium-high heat.

Assemble the Skewers:

  1. Thread the marinated chicken chunks onto skewers, alternating with pineapple chunks for a balanced combination of savory and sweet.

Grill the Skewers:

  1. Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally to ensure even cooking.
  2. Grill until the chicken is fully cooked and has a slight char on the outside.

Prep time: 15 minutes (plus marinating time)
Total time: 30 minutes (excluding marinating time)
Servings: 4-6
