Notes
- Prepare the Brine: In a medium saucepan, combine apple cider vinegar, water, sugar, salt, and pickling spice. Bring to a boil, stirring until sugar and salt dissolve.
- Add Sausages and Veggies: Add smoked cocktail sausages, sliced onion, and smashed garlic to the boiling brine. Return to a boil, then reduce heat to low and simmer for 15 minutes.
- Cool and Jar: Remove the saucepan from heat and let the sausages cool slightly in the brine. Transfer sausages and vegetables to a clean jar, ensuring they are fully submerged in the brine.
- Refrigerate: Seal the jar and refrigerate for at least 2 days to allow flavors to develop.
