- 1 large head of cauliflower, cut into florets
- 1 clove garlic, minced
- 2 tablespoons fresh lemon juice
- ½ cup tahini
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- Salt and black pepper, to taste
- ¼ teaspoon ground turmeric
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 3 tablespoons water
Instructions
- Preheat Oven: Preheat oven to 425°F (220°C).
- Prep Cauliflower: Toss cauliflower florets with olive oil, smoked paprika, turmeric, salt, and pepper. Spread on a baking sheet.
- Roast Cauliflower: Roast in preheated oven for 25-30 minutes, stirring halfway through, until golden brown and tender.
- Make Tahini Sauce: Whisk together tahini, garlic, lemon juice, cumin, and water. Adjust consistency with more water. Season with salt.
- Serve: Drizzle roasted cauliflower with tahini sauce. Garnish as desired.
