Irresistible Sweet Potato Pie with Maple and Rum

  • 2 medium sweet potatoes, baked or boiled until soft (skins removed)
  • ¾ cup maple syrup
  • ¾ cup heavy whipping cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • 2 tablespoons dark rum

Instructions

 

  1. Prepare Sweet Potatoes
    • In a large mixing bowl, mash the baked or boiled sweet potatoes until smooth.
  2. Mix Ingredients
    • Add the remaining ingredients one at a time, beating with an electric mixer between each addition to ensure a smooth mixture.
  3. Blend Well
    • Once all ingredients are added, beat the mixture on medium speed for about 2 minutes until well combined.
  4. Pour into Pie Shell
    • Transfer the sweet potato filling into an unbaked pie shell of your choice.
  5. Bake
    • Bake in a preheated oven at 400°F for 45 minutes, or until the filling is set.
  6. Cool
    • Allow the pie to cool completely before serving.
  7. Serve
    • Top with whipped cream before serving for an extra touch of sweetness.
