- 2 medium sweet potatoes, baked or boiled until soft (skins removed)
- ¾ cup maple syrup
- ¾ cup heavy whipping cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- ½ teaspoon salt
- 2 tablespoons dark rum
Instructions
- Prepare Sweet Potatoes
- In a large mixing bowl, mash the baked or boiled sweet potatoes until smooth.
- Mix Ingredients
- Add the remaining ingredients one at a time, beating with an electric mixer between each addition to ensure a smooth mixture.
- Blend Well
- Once all ingredients are added, beat the mixture on medium speed for about 2 minutes until well combined.
- Pour into Pie Shell
- Transfer the sweet potato filling into an unbaked pie shell of your choice.
- Bake
- Bake in a preheated oven at 400°F for 45 minutes, or until the filling is set.
- Cool
- Allow the pie to cool completely before serving.
- Serve
- Top with whipped cream before serving for an extra touch of sweetness.
