- 1 cup pecan halves
- 1 cup soft caramel candies, unwrapped
- 2 tablespoons heavy cream
- 1 cup semi-sweet or milk chocolate chips (or a mix of both)
- Sea salt, for garnish (optional)
Instructions
- Prepare a Baking Sheet
- Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
- Arrange the Pecans
- Place the pecan halves into small clusters of 3-4 pecans each on the baking sheet, ensuring they touch in the center.
- Make the Caramel
- In a microwave-safe bowl, combine the caramel candies and heavy cream. Microwave in 15-20 second intervals, stirring after each interval, until smooth and melted (approximately 1-2 minutes total).
- Add Caramel to Clusters
- Spoon about 1 teaspoon of the melted caramel over the center of each pecan cluster, covering where the pecans meet. Allow the caramel to set for a few minutes to firm up.
- Melt the Chocolate
- In another microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring in between until smooth and fully melted.
- Top with Chocolate
- Spoon the melted chocolate over each caramel pecan cluster, ensuring the caramel layer is covered. For a more polished look, smooth the chocolate with the back of the spoon.
- Add Sea Salt (Optional)
- If desired, sprinkle a pinch of sea salt over the chocolate while it’s still wet.
- Cool and Set
- Let the clusters set at room temperature for about an hour, or refrigerate for 15-20 minutes until the chocolate hardens.
- Serve
- Once set, remove the clusters from the parchment paper and enjoy!
