Hearty Beef Stew | A Winter Warmer

  • 2 lbs beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 (14-ounce) can crushed tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Sear the Beef: Heat olive oil in a large pot over medium-high heat. Season the beef chuck roast with salt and pepper and sear on all sides until browned.
  2. Sauté the Veggies: Remove the beef from the pot and add the onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
  3. Simmer the Stew: Return the beef to the pot and add the beef broth, crushed tomatoes, rosemary, and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, or until the beef is tender and falls apart easily.
  4. Shred and Serve: Shred the beef in the pot, mixing it with the sauce. Garnish with fresh parsley before serving.
