- 1 cup barley
- 1 onion, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups beef broth
- 1 tsp thyme
- Salt and pepper, to taste
Instructions
- Brown the Beef:
In a large pot, brown the beef stew meat over medium-high heat. - Sauté the Vegetables:
Add the onions, carrots, celery, and garlic to the pot. Cook until the vegetables are tender. - Combine Ingredients:
Stir in the barley, beef broth, thyme, salt, and pepper. - Simmer:
Bring the soup to a boil, then reduce heat to low and simmer for about an hour, or until the beef is tender and the barley is cooked through. - Serve:
