Hearty Beef and Barley Soup: A Wintertime Comfort Food

  • 1 lb beef stew meat, cubed
  • 1 cup barley
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups beef broth

  • Salt and pepper, to taste

 

Instructions

 

  1. Brown the Beef:
    In a large pot, brown the beef stew meat over medium-high heat.
  2. Sauté the Vegetables:
    Add the onions, carrots, celery, and garlic to the pot. Cook until the vegetables are tender.
  3. Combine Ingredients:
    Stir in the barley, beef broth, thyme, salt, and pepper.
  4. Simmer:
    Bring the soup to a boil, then reduce heat to low and simmer for about an hour, or until the beef is tender and the barley is cooked through.
  5. Serve:
