- 3/4 cup green bell pepper, diced
- 3/4 cup yellow onion, diced
- 3 cloves garlic, minced
- 2–3 green onions, chopped (for garnish)
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- 2 tbsp vegetable oil
- 1–2 cups chicken broth (if needed for moisture)
Instructions
- Sauté the Vegetables:
Heat vegetable oil in a large skillet over medium heat. Add the diced green bell pepper, yellow onion, and minced garlic. Sauté until softened, about 5 minutes. - Cook the Beef:
Add the ground beef to the skillet. Break up the meat as it cooks, and drain off any excess grease. - Combine Ingredients:
Stir in the cooked rice, paprika, cayenne pepper (optional), salt, and black pepper. Mix well to combine. - Add Moisture:
If the mixture is too dry, gradually add chicken broth until the desired consistency is reached. - Simmer and Serve:
Reduce the heat to low and simmer for 5 minutes, stirring occasionally. Serve hot, garnished with chopped green onions.
