Ingredients:
- 1 sheet puff pastry (thawed if frozen)
- 1 tablespoon olive oil
- 2 shallots, finely chopped
- 2 garlic cloves, minced
- 8 oz mushrooms (cremini or button), sliced
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh parsley, chopped (plus extra for garnish)
- 4 oz herbed goat cheese (softened)
- Salt and black pepper, to taste
- 1 egg (beaten, for egg wash)
Instructions:
1. Prepare the Puff Pastry:
Preheat your oven to 375°F (190°C). Roll out the thawed puff pastry and cut it into 4-inch squares. Place the squares on a parchment-lined baking sheet. Lightly score a smaller square within each pastry square, about ½ inch from the edge, to create a border when baking.
2. Sauté the Vegetables:
In a large skillet, heat the olive oil over medium heat. Add the chopped shallots and minced garlic, sautéing for about 2-3 minutes until softened and fragrant.

3. Cook the Mushrooms:
Add the sliced mushrooms to the pan and cook for another 5-7 minutes until they release their moisture and start to brown.

4. Add Lemon Juice:
Stir in the lemon juice, letting it simmer until the liquid has mostly evaporated, about 2-3 minutes.
5. Season and Set Aside:
Mix in the fresh parsley and season the mixture with salt and black pepper to taste. Remove from heat and set aside.
6. Assemble the Tarts:
In each puff pastry square, spread a layer of herbed goat cheese within the inner scored square. Top the goat cheese with a spoonful of the mushroom, shallot, and garlic mixture. Optionally, pinch the corners or sides of the puff pastry to create a decorative shape.
7. Bake:
Brush the edges of the puff pastry squares with the beaten egg to achieve a golden brown color when baked. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and puffed.
8. Serve:
Garnish with extra parsley if desired and serve warm.
