Instructions

  1. Prep the Chicken: Preheat oven to 375°F. Season chicken breasts with salt and pepper. Carefully slice each breast horizontally, creating a pocket.
  2. Stuff the Chicken: Fill each pocket with Brie, cranberries, and spinach.
  3. Sear the Chicken: Heat olive oil in a skillet over medium heat. Sear chicken breasts on both sides until golden brown.
  4. Bake the Chicken: Sprinkle with rosemary, thyme, and honey (if desired). Transfer skillet to oven and bake for 15-20 minutes, or until cooked through and cheese is melted.
