- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup dried cranberries
- 4 oz Brie cheese, sliced
- 1/4 cup fresh spinach, chopped
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp honey (optional)
Instructions
- Prep the Chicken: Preheat oven to 375°F. Season chicken breasts with salt and pepper. Carefully slice each breast horizontally, creating a pocket.
- Stuff the Chicken: Fill each pocket with Brie, cranberries, and spinach.
- Sear the Chicken: Heat olive oil in a skillet over medium heat. Sear chicken breasts on both sides until golden brown.
- Bake the Chicken: Sprinkle with rosemary, thyme, and honey (if desired). Transfer skillet to oven and bake for 15-20 minutes, or until cooked through and cheese is melted.
- Serve: Let rest for a few minutes before serving.
