1 large head of green cabbage, sliced into 1-inch thick steaks
3 tbsp olive oil
Salt and pepper to taste
1/4 cup balsamic vinegar
1 tbsp honey
1 tsp Dijon mustard
Fresh thyme for garnish

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare Cabbage Steaks: Brush both sides of the cabbage steaks with olive oil and season with salt and pepper.
Roast Cabbage: Place the cabbage steaks on the prepared baking sheet and roast for 25-30 minutes, flipping halfway through, or until crispy and golden brown.
Make Balsamic Glaze: In a small saucepan, combine balsamic vinegar, honey, and Dijon mustard. Simmer over medium heat until thickened.
Serve: Drizzle the balsamic glaze over the roasted cabbage steaks and garnish with fresh thyme.
