Graham Cracker Crust:
- 9 graham cracker sheets, crushed (about 5.4 oz)
- 6 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
Cookie Dough Layer:
- 1 ¼ cup all-purpose flour
- ¼ tsp salt
- ¼ tsp baking powder
- ¾ cup granulated sugar
- ½ cup unsalted butter, at room temperature
- 1 tsp vanilla extract
- 1 large egg
Strawberry Cream Cheese Layer:
- ½ cup quartered fresh strawberries, pureed
- 4 oz cream cheese, softened
Toppings:
- ½ cup thinly sliced fresh strawberries
- ½ cup white chocolate chips
- ½ cup sweetened condensed milk
Instructions
- Prepare the Oven & Pan:
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch pan with cooking spray and set aside. - Make the Graham Cracker Crust:
In a large bowl, mix the crushed graham crackers, melted butter, and 2 tbsp granulated sugar until combined. Press the mixture evenly into the bottom of the prepared pan. - Prepare the Cookie Dough Layer:
In another bowl, whisk together the flour, salt, and baking powder. In a separate large bowl, cream ¾ cup sugar and ½ cup butter until light and fluffy (about 2 minutes). Add the egg and vanilla extract, mixing until just combined. Gradually add the flour mixture, mixing until fully incorporated. Carefully spread small amounts of the cookie dough mixture over the graham cracker crust, flattening it with your hands to cover as much surface as possible. - Add the Strawberry Cream Cheese Layer:
Beat together the cream cheese and pureed strawberries until smooth. Spread this mixture evenly over the cookie dough layer. - Top with Strawberries, White Chocolate & Sweetened Condensed Milk:
Sprinkle the sliced strawberries over the cream cheese layer, followed by the white chocolate chips. Evenly drizzle the sweetened condensed milk over the entire surface. - Bake & Chill:
Bake for 30 minutes or until set and lightly golden on top. Let the bars cool, then refrigerate overnight for the best results. - Serve:
