1 beef loin roast (about 3 lbs)

Salt and pepper to taste

2 tbsp olive oil

1/2 cup cranberry sauce (whole berry or jellied)

2 tbsp Dijon mustard

1 cup apple cider

1 tbsp apple cider vinegar

2 cloves garlic, minced

Fresh rosemary for garnish (optional)

Instructions

Preheat and Season: Preheat oven to 375°F (190°C). Season the beef loin roast with salt and pepper.

Sear the Roast: Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned.

Make the Glaze: In a small bowl, combine cranberry sauce and Dijon mustard.

Roast the Beef: Place the seared roast in a roasting pan. Pour apple cider and vinegar into the pan, add garlic cloves around the roast. Cover loosely with foil. Roast for 1.5-2 hours, or until desired doneness. Baste occasionally with the pan juices.

Rest and Serve: Let the roast rest for 10 minutes before slicing. Serve with the pan juices and garnish with fresh rosemary.
