Cozy Italian Lasagna Soup in a Pot

Ingredients

  • 1 lb ground beef
  • 1 lb ground Italian sausage
  • 10 lasagna noodles (broken into pieces)
  • 1 onion, chopped
  • 24 oz jar pasta sauce
  • 4 tsp minced garlic
  • 8 cups chicken broth
  • 2 tbsp tomato paste
  • 14 oz can diced tomatoes
  • 1 tsp sugar
  • 2 tsp balsamic vinegar
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper, to taste
  • Parmesan, mozzarella, or ricotta cheese (for topping)

Instructions

 

  1. Brown the Meat
    • In a large pot over medium-high heat, add the ground beef, ground Italian sausage, and chopped onion. Cook until the meat is fully browned, then drain any excess fat.
  2. Add Garlic
    • Return the pot to the stove, add the minced garlic, and sauté for about 30 seconds until fragrant.
  3. Combine Broth and Seasonings
    • Stir in the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, bay leaf, and salt and pepper to taste. Mix well to combine.
  4. Simmer and Cook Noodles
    • Cover the pot and bring the mixture to a boil. Once boiling, add the broken lasagna noodles, then reduce heat to medium-low. Let the soup simmer until the noodles are soft, stirring occasionally.
  5. Serve
    • Ladle the soup into bowls and top with your choice of Parmesan, mozzarella, or a dollop of ricotta cheese. Serve hot and enjoy this cozy Italian comfort!
