- 4 medium sweet potatoes
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup pesto (store-bought or homemade)
- 8 ounces burrata cheese
- Fresh basil leaves, for garnish
Instructions
- Prep the Sweet Potatoes: Preheat oven to 400°F (200°C). Pierce sweet potatoes and bake for 45-50 minutes.
- Roast the Tomatoes: Toss halved tomatoes with olive oil, salt, and pepper. Roast on a baking sheet for 15-20 minutes.
- Assemble the Stuffed Sweet Potatoes: Slice sweet potatoes open, fill with pesto and burrata, and top with roasted tomatoes.
- Garnish and Serve: Garnish with fresh basil leaves and serve immediately.
