Salad:
- 1 lb large cooked shrimp, peeled and deveined
- 4 cups romaine lettuce, chopped
- 2 hard-boiled eggs, sliced
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 cucumber, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup black olives, sliced (optional)
- 2–3 radishes, thinly sliced (optional)
- Lemon wedges, for garnish
Louie Dressing:
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp lemon juice
- 1 tsp Worcestershire sauce
- 1 tsp prepared horseradish (adjust to taste)
- Salt and pepper to taste
Instructions
- Make Dressing: Whisk together mayonnaise, ketchup, lemon juice, Worcestershire sauce, horseradish, salt, and pepper.
- Assemble Salad: Place romaine lettuce on a platter or individual plates. Top with shrimp, eggs, tomatoes, avocado, cucumber, red onion, olives, and radishes.
- Add Dressing: Drizzle dressing over the salad or serve it on the side. Garnish with lemon wedges.
