- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 ½ teaspoons ground nutmeg
- 1 ½ teaspoons ground cinnamon
- ½ – 1 ½ teaspoons ground cloves, to taste
- ½ teaspoon baking powder
- ½ teaspoon salt
- 4 large eggs
- 1 cup white sugar
- ¼ cup brown sugar
- ½ teaspoon vanilla extract
- 1 can (15 ounces) pumpkin puree
- ¼ cup neutral oil or coconut oil
Instructions
- Prep: Grease and flour an 8½ x 4½ inch loaf pan.
- Combine Dry Ingredients: In a medium bowl, whisk together flour, baking soda, nutmeg, cinnamon, cloves, baking powder, and salt.
- Mix Wet Ingredients: In a large bowl, beat together eggs, white sugar, brown sugar, and vanilla extract until combined. Stir in pumpkin puree and oil.
- Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Bake: Pour batter into prepared loaf pan. Bake in a preheated 350°F (175°C) oven for 70-75 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
