Classic Pumpkin Bread | Warm & Cozy Fall Treat

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground nutmeg
  • 1 ½ teaspoons ground cinnamon
  • ½1 ½ teaspoons ground cloves, to taste
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 4 large eggs
  • 1 cup white sugar
  • ¼ cup brown sugar
  • ½ teaspoon vanilla extract
  • 1 can (15 ounces) pumpkin puree
  • ¼ cup neutral oil or coconut oil

Instructions

  1. Prep: Grease and flour an 8½ x 4½ inch loaf pan.
  2. Combine Dry Ingredients: In a medium bowl, whisk together flour, baking soda, nutmeg, cinnamon, cloves, baking powder, and salt.
  3. Mix Wet Ingredients: In a large bowl, beat together eggs, white sugar, brown sugar, and vanilla extract until combined. Stir in pumpkin puree and oil.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Bake: Pour batter into prepared loaf pan. Bake in a preheated 350°F (175°C) oven for 70-75 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
