Ingredients

For the Potato Dough:

  • 3 large potatoes (approximately 900 grams)
  • 300 grams cheddar cheese, grated
  • 2 tablespoons vegetable oil (20 ml)
  • 4 grams salt

For the Meat Filling:

  • 500 grams ground beef
  • 2 tablespoons vegetable oil (20 ml)
  • 1 large onion, finely chopped
  • 3 green peppers, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato sauce (25 grams)
  • 1 teaspoon tomato paste (20 grams)
  • Seasonings: Paprika, black pepper, cumin, thyme, salt to taste
  • 3-4 sprigs parsley, finely chopped

Directions

Prepare the Potato Dough:

  1. Cook the Potatoes: Peel and chop the potatoes into chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil over medium-high heat and cook until tender, about 15-20 minutes.
  2. Mash and Mix: Drain the potatoes and mash until smooth. Let them cool slightly. Add the grated cheddar cheese, vegetable oil, and salt to the mashed potatoes. Mix well until fully combined. Set aside.

Prepare the Meat Filling:

  1. Sauté Vegetables: Heat the vegetable oil in a large skillet over medium heat. Add the finely chopped onion and diced green peppers. Sauté until softened, about 5 minutes.
  2. Cook the Beef: Add the minced garlic and cook for another minute until fragrant. Then, add the ground beef to the skillet. Cook until browned, breaking it up with a spoon, about 7-10 minutes.
  3. Add Flavor: Stir in the tomato sauce, tomato paste, paprika, black pepper, cumin, thyme, and salt. Cook for an additional 5 minutes to allow the flavors to meld. Remove from heat and stir in the chopped parsley. Let cool slightly.

Assemble the Potato Roll:

  1. Preheat the Oven: Preheat your oven to 350°F (180°C).
  2. Spread the Dough: On a large piece of parchment paper or a clean work surface, spread the potato dough into a rectangular shape, about 1 cm thick.
  3. Add the Filling: Evenly spread the cooled meat filling over the potato dough, leaving a small border around the edges.
  4. Roll It Up: Carefully roll the potato dough over the meat filling, using the parchment paper to guide the roll. Seal the edges to ensure the filling stays inside.
  5. Bake: Transfer the potato roll to a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until golden brown and heated through.

Serve:

Let the potato roll cool slightly before slicing. Serve warm with your favorite sides or sauces for a meal that’s sure to please everyone at the table.
