Butterscotch Cheesecake Bars: A Sweet Indulgence

  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 teaspoon salt
  • Whipped cream for topping (optional)
  • Additional butterscotch chips for garnish (optional)

Instructions

Prepare the Crust:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar.
  3. Press the mixture firmly into the bottom of a 9×9-inch baking pan to form an even layer.

Make the Cheesecake Filling:

  1. In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  2. Add the vanilla extract, butterscotch chips, eggs, sour cream, and salt. Mix until smooth and well combined.

Assemble and Bake:

  1. Pour the cheesecake filling over the prepared graham cracker crust, spreading it evenly with a spatula.
  2. Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.

Cool and Chill:

  1. Remove the cheesecake bars from the oven and allow them to cool at room temperature for about 30 minutes.
  2. Once cooled, refrigerate for at least 2 hours or until fully chilled and set.

Serve:

  1. Cut into bars and serve chilled, topped with whipped cream and additional butterscotch chips if desired.
