Instructions
Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar.
- Press the mixture firmly into the bottom of a 9×9-inch baking pan to form an even layer.
Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
- Add the vanilla extract, butterscotch chips, eggs, sour cream, and salt. Mix until smooth and well combined.
Assemble and Bake:
- Pour the cheesecake filling over the prepared graham cracker crust, spreading it evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
Cool and Chill:
- Remove the cheesecake bars from the oven and allow them to cool at room temperature for about 30 minutes.
- Once cooled, refrigerate for at least 2 hours or until fully chilled and set.
Serve:
- Cut into bars and serve chilled, topped with whipped cream and additional butterscotch chips if desired.
