Banana Pudding Cheesecake Bars: A Unique Dessert

Crust:

  • 2 cups crushed vanilla wafer cookies
  • 1/4 cup melted butter

Cheesecake Filling:

  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ripe banana, mashed

Banana Pudding Layer:

  • 1 (3.4-ounce) package instant banana pudding mix
  • 1 1/2 cups cold milk
  • 1/2 cup whipped topping (optional)

Assembly:

  • 1 cup whipped topping (or whipped cream)
  • 12 ripe bananas, sliced
  • Additional vanilla wafers, crushed, for garnish

Instructions

  1. Prep and Bake Crust: Preheat oven to 325°F (160°C). Combine crushed cookies and melted butter. Press into a greased 8×8 inch pan. Bake for 10 minutes. Cool.
  2. Make Cheesecake Filling: Beat cream cheese and sugar until smooth. Mix in sour cream, vanilla, eggs, and mashed banana.
  3. Assemble: Pour filling over crust. Bake for 35-40 minutes, or until set. Cool completely, then refrigerate.
  4. Make Pudding Layer: Whisk pudding mix and milk. Fold in whipped topping, if using.
  5. Assemble: Spread pudding layer over chilled cheesecake. Top with whipped topping, banana slices, and crushed cookies. Refrigerate until set.
