Ingredients

Scale

For the Crust:

    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup unsalted butter, melted
    • 2 tablespoons granulated sugar
  • For the Filling:
    • 3 (8 oz) packages cream cheese, softened
    • 1 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 3 large eggs
    • 1 cup sour cream
    • 1/4 cup all-purpose flour
    • 1/2 cup pineapple juice
    • 1/2 cup orange juice
    • Orange food coloring (optional)
  • For the Topping:
    • Whipped cream
    • Fresh pineapple slices
    • Orange slices
    • Fresh mint leaves

Instructions

Prepare the Crust:

    • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
    • Combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan and bake for 10 minutes. Let cool.
  1. Create the Filling:

    • Beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in sour cream and flour.
    • Divide the batter into two bowls. Stir pineapple juice into one and orange juice (with optional food coloring) into the other.
  2. Assemble the Cheesecake:

    • Pour the pineapple batter over the crust. Top with the orange batter and swirl with a knife to create a marbled effect.
  3. Bake and Chill:

    • Bake for 50-60 minutes. Let cool in the oven for 1 hour, then refrigerate for at least 4 hours.
  4. Serve:

    • Top with whipped cream, pineapple, orange slices, and mint leaves.
